Asparagus is a foodie’s dream. This is a delicacy to be tasted with reverence. Which you generally need to have time to try: the season of this vegetable is less than 2 months.

In Europe, for example, the asparagus season starts in late April or early May (depending on the weather) and ends exactly on June 24, Midsummer Day, when the last harvest is harvested. In Crimea, the asparagus season is April-June, in Kyiv – a week later, in Moscow and St. Petersburg – May-July. However, if you didn’t have time, you can later feast on some brought from New Zealand –asparagus is distributed on all continents, in 150 species.

Both white shoots (which are obtained if the plant is sheltered from light) and green ones grown in natural conditions are used for food. Connoisseurs say that white shoots are incomparably more tender and tastier, richer in fiber (in which gourmets experience an acute physiological need). But doctors are unanimous:green asparagus shoots are more nutritious than white ones, they contain two to three times more vitamins and less coarse fibers.
