The variety and abundance of vegetables and fruits in the autumn months in our latitudes reaches its annual climax. And although many of us are getting bored with plant foods by this time (whether it’s in the spring, when every bunch of dill brings pleasure!), It is in the fall that our northern vegetables that have ripened under natural conditions bring maximum benefit to the body.

Unlike spring vegetables and the first fruits, they practically do not contain traces of artificial fertilizers and growth stimulants, they received a full dose of sunlight and natural juices, as they ripened “on the vine”. Well, and even with winter vegetables and fruits that have lost all their properties, except for the “presentation”, they cannot be compared at all. That is why right now it is worth filling your diet with the gifts of nature as much as possible. Well, if useful, but already fed up potatoes, carrots, cabbage and apples are no longer to your taste, you just need to look for something else among the abundance of vegetables and fruits.

Traditionally, a smaller role in our daily nutrition is played by BEET. As a rule, we use it only in two or three dishes: borscht, vinaigrette, herring “under a fur coat.” But in vain! Beets – stewed, boiled, baked, and best of all raw need to be eaten more often. Scientists do not cease to discover in it more and more useful properties.

For example, it has long been recommended to consume beets to preserve the freshness and beauty of the face. And besides already long-known bactericidal and laxative properties, more recently, anti-cancer “merits” of beets were discovered. It turned out that it was the coloring substances of beets that have antitumor properties.. These dyes are not destroyed by either boiling or gastric juice; scientists have identified in them “hormones of youth” that activate the activity of the respiratory-oxidative enzyme and metabolism in the cell.

And since with age and with many diseases, the ability of cells to oxidize decreases, eating beets will help normalize cellular respiration faster and delay the onset of old age. So you’re perfectly right instinctively always chose brighter beets, with the most dense dark red color. It is these roots that bring the maximum benefit.

Undeservedly little we use for food and BEANS. But it contains a lot of phosphorus-rich compounds – lecithin and choline. They prevent the deposition of cholesterol on the inner walls of blood vessels.

It also rarely appears on our table PUMPKIN. But this great diet food. The nutritional value of pumpkin is low, but it contains carbohydrates, mineral salts, nicotinic and pantothenic acids, a large amount of carotene and other vitamins.

In fresh CORNwhich we traditionally consider only a delicacy for unpretentious children (although in most developed countries corn is an honored guest on the table of any income), a lot of selenium, which beneficial effect on the nervous system and metabolism. But it is precisely depressions and the exacerbation of all chronic diseases that are so “famous” for autumn.

But sweet or Bulgarian PEPPER appreciated by our compatriots. Many try to grow it themselves, and they eat everything. The benefits of sweet pepper are determined primarily by the high content of vitamins in it.

In terms of the amount of vitamin C, it surpasses lemon, any vegetables, and even black currants. Moreover, in sweet pepper, vitamin C is perfectly preserved both during freezing and during canning (in our beloved lecho), since it does not contain enzymes that destroy the vitamin. And in pepper there is a rather rare vitamin P, which, in combination with ascorbic acid, helps strengthen the walls of blood vessels. This is very important in diabetes. The daily requirement of these vitamins is guaranteed by only 30-40 grams of fresh, frozen and canned bell pepper per day, which is about one medium-sized pepper or half a fleshy one.

Pepper is also rich in vitamins A, B1, B2, F, PP, B6 (folic acid), E. In addition, it contains many valuable pectins, malic and citric acids, potassium, copper, zinc. iron, magnesium and phosphorus. In medicine, sweet pepper is used as a multivitamin remedy for hypotension, beriberi, heart and liver diseases. Sweet pepper is especially recommended for pregnant women and nursing mothers. The juice from the green fruits of sweet pepper contains silicon in abundance, which is vital for our nails and hair.

Of the sweet delicacies that autumn nature generously gives us – the most refined, popular and very healthy – MELON. It is rich in vitamins and minerals: ascorbic acid, vitamin PP, iron, carotene – this is a far from complete list of useful substances. Ancient Eastern healers believed that it was melon makes a woman truly beautiful.

Another southern delicacy quite accessible to us in the fall is GRAPE – simply a storehouse of valuable substances and a cure for many diseases. It has a tonic, diuretic, laxative effect, enhances metabolism, promotes the formation of red blood cells, increases hemoglobin, stimulates appetite, increases systolic pressure, and increases lung capacity.
