Everyone knows that vegetable oils are more useful than animal fats – both obsessive advertising, and a grandmother wise with life experience, and a district therapist talk about this. But today the choice of oils is so great that it is already fair to choose the most valuable, healthy and tasty ones from them. On sale you can find olive and sunflower, palm and peanut, soybean and sesame, palm and corn vegetable oils. It’s just eyes wide open. Why such diversity? But the fact is that, despite the common name, all these products have completely different properties.

Some are just a storehouse of vitamins and polyunsaturated acids necessary for the human body. Others, which have practically no nutritional value, but are very cheap, can only be used for frying foods. Third … However, let’s go in order.

Well known to us and popular for a long time in Russia sunflower oil – one of the best types of vegetable fat. It is physiologically very active and is also rich in fatty polyunsaturated acids (they are also called vitamin F), which are necessary for our body to build cells, synthesize hormones, and maintain immunity. They give stability and elasticity to blood vessels, reduce the sensitivity of the body to the action of ultraviolet rays and radioactive radiation, regulate the contraction of smooth muscles, etc.

Soybean oil it is better than others for baby food, as it contains substances necessary for the formation of the central nervous system and the visual apparatus. It is even similar in composition to fish oils – they contain the same polyunsaturated acids.

Corn oil It does not have any special advantages over sunflower and soy, but it contains a large number of useful accompanying substances that can only be found in it.

Peanut, sesame and rapeseed oils – the least useful of vegetable fats. They have a lot of fatty acids with a large molecular weight and few useful polyunsaturated acids. It is no coincidence, perhaps, that there is so much unhealthy fatness among ordinary American citizens who are simply obsessed with peanut butter sandwiches. No doubt – it is very high in calories, but there is a little benefit from them …

Palm oil – in general, the least valuable of all vegetable oils. It is firm in texture and looks like pork fat. It is used only for frying certain products. Moreover, for the conditions of the Central Russian plains, this type of vegetable oil is poorly compatible with the habits of the body. Still, it is recommended to eat traditional foods for a particular area. Then this is more useful. And palm oil is very difficult to consider as a traditional food for a Russian person.

Well, and the most valuable and nutritious, of course, olive oil, which is obtained from the pulp and seeds of the fruits of the olive tree (their pulp contains up to 55 percent oil!). True, the percentage of fatty and polyunsaturated acids in olive oil is small, but it is absorbed better than others. Olive oil is well tolerated even by people suffering from digestive disorders, diseases of the liver and gallbladder. Moreover, such patients are even recommended to take a spoonful of olive oil on an empty stomach – this has a slight choleretic effect. (A spoonful of sunflower oil can provoke hepatic colic.)

Olive oil prevents cardiovascular diseases. The world-famous “Mediterranean diet”, which the inhabitants of this region inevitably follow (here it is, the food traditional for a particular region!), Includes a lot of vegetables, fruits and fish, but little meat and animal fats. Olive oil is the main source of fat in the diet. Thanks to this natural diet, the inhabitants of the Mediterranean rarely suffer from cardiovascular diseases.

Refining, that is, cleaning, as a rule, olive oils are not of very high quality. They are light yellow or golden yellow in color. Connoisseurs also value unrefined extra virgin olive oil – the so-called Provencal. It has a specific smell and taste, and its color is not golden, but slightly greenish, but it is the most useful one.

Real olive oil is actually quite easy to distinguish from fakes and surrogates. To do this, simply put it in the refrigerator for several hours. In natural oil (whether refined or not), white flakes form in the cold, which disappear again at room temperature. This is due to the content of a certain percentage of solid fats in olive oil, which, when cooled, solidify and give these hard flaky inclusions.

All vegetable oils (whether the most expensive or the very cheap ones available) have three common enemies: light, temperature and air, which increase the oxidation process. Therefore, never keep the oil near the stove or on the windowsill, as well as in an open bottle. It is better to keep valuable olive oil in the “warmest” chamber of the refrigerator.

Never buy expired oil and stock up on it for future use: spoiled oil becomes rancid, with an unpleasant taste and smell. And there is no need to talk about the benefits of such oil.

Even valuable olive oil should not be reused after frying. It forms toxic compounds with mutagenic and carcinogenic effects. And the useful substances that were previously in raw oil have already been destroyed anyway.

And the last. Everyone knows that oil can be refined, that is, refined, and not. Refined oil is more pleasant to consume: does not have a sharp specific smell and strong taste, transparent, light, without any sediment. However, unrefined vegetable oil is more useful, since it retains many substances (including vitamins) that are destroyed during purification.. For example, in order to make the oil transparent, phospholipids are removed from it, which actually contribute, oddly enough, to the removal of cholesterol from the body. During refining, the oil also loses some of the vitamin E and carotenoids. In addition, which is known to very few, unrefined oil also lasts longer.

But no matter which type of vegetable oil you prefer, its benefits are undeniable. Our ancestors, wise by life experience, also knew about this, building long fast days on vegetable oil. This is known to the authors of the most modern and fashionable diets. Remember this and you!
