A few years ago, it was believed that a stomach ulcer is a “pleasure”, as a rule, for young single, actively pursuing a career and mostly smoking men. Today, “working girls” are actively competing with men in all these qualities. And as a reward for those who seek equality with men in everything – the same peptic ulcer of the stomach or duodenum. WHERE DOES THIS ATTACK FROM? There are several causes of peptic ulcer disease. Guilty in its development, firstly, our disregard for health in general and nutrition in particular. Especially in the young, student, “bachelor” years, when only childhood memories remained about three meals a day and daily soup, and a measured stable “family” life is still far away.
In addition, like many diseases of the twentieth century, ulcers are often the result of stress. The impulse originating in the brain from the focus of irritation is converted in complex ways into a command that stimulates the production of gastric juice, which, as you know, consists mainly of aggressive hydrochloric acid. And she immediately begins to corrode the walls of the stomach, which its owner (due to the same stress) forgot to fill. That’s why gastroenterologists are the only ones in the medical fraternity who don’t talk us out of “stress eating.”
It is believed that microorganisms play a fatal role in the formation of stomach ulcers. In principle, a variety of microbes are normally found in the human digestive tract. But when the defense mechanisms of the stomach are weakened, these microbes are activated.
WHAT TO DO?
Like many diseases, an ulcer puts a sick body in a “vicious circle”. Weakening the motor function of the stomach, it retains food in it longer, causing additional production of hydrochloric acid, which corrodes the same ulcer … It is customary for us to break this “vicious circle” with an operation. But abroad, ulcers are almost never operated on: they are treated conservatively. And the main role in such treatment is played by diet therapy.
The task of therapeutic nutrition for peptic ulcer disease is to maximize the restoration of the normal structure of the internal mucous surface of the stomach, which is why your meals should now be as sparing as possible. After all, an ulcer is essentially an open wound that reacts to stretching, touch, temperature, chemical exposure.
Therefore, firstly, food should be fractional. As you remember, this means that the portions of each meal should be small so as not to stretch the walls of the stomach. It is better for an ulcer to prefer a six-time meal, that is, to eat approximately every three hours. In this case, the stomach will be almost constantly filled with food that neutralizes the acid.
Secondly, “mechanical crushing” must be observed. Doctors say that the ulcer must first learn to chew. After all, large pieces of food not softened by saliva, touching the ulcer, can not only cause severe pain, but also increase the wound. But even thorough chewing may not be enough if the food itself is coarse. It is to a healthy person that slices of french fries, a piece of meat or bread seem soft. It is better for the ulcer to forget about them, eating food only in crushed and mashed form. And completely forget about foods containing rough cell membranes: turnips, radishes, radishes, asparagus, peas and beans, unripe and rough-skinned fruits, vegetables, gooseberries, currants, grapes, dates, apples with a peel.
Thirdly, the strongest irritant of the ulcer is the chemical composition of the food. It can be compared to sprinkling salt on a fresh wound. Therefore, it is necessary not only to limit the use of salt itself (up to 8-10 g per day), but also to completely eliminate hot spices, vinegar and any other acids, as well as radishes, radishes, onions and garlic, mushrooms.
Besides, the chemical composition of food also affects the release of gastric secretion – acid. All products are divided into weak and strong pathogens. The former include: milk and dairy products, cereal vegetable soups, liquid cereals, well-cooked meat, fresh boiled fish, soft-boiled eggs or in the form of an omelette, white bread, alkaline non-carbonated water, weak tea. They are what you need.
Strong causative agents of gastric secretion include: mustard, cinnamon, horseradish, pepper and other spices; fried, canned and smoked dishes; strong broths – meat, mushroom, fish; black bread, pastry products; strong tea, coffee; drinks containing alcohol and carbon dioxide. As you can see, this is not so much about products, but about specific dishes. After all, the same product, prepared in different ways, is perceived differently by the stomach. For example, a piece of fried meat can bring you a lot of suffering, and boiled meat will “slip through” without causing excessive acidity.
The texture of food also matters.. So, a piece of meat again irritates the stomach, staying longer in it. And crushed into minced meat is evacuated from it much faster. The thermal mode of nutrition is also important. Too hot and too cold food also irritate the wound (ulcer). Therefore, the temperature of hot dishes should not exceed 60 degrees, and cold – less than 15.
Fats have a biphasic effect. First, they neutralize a large amount of acid, and then their decomposition products contribute to its stimulation. But fats also have a mechanical effect. They envelop the stomach, forming, as it were, a second shell, and thereby protect the mucous membrane from contact with acid. Butter has these qualities to the fullest. Less preferred vegetable oils, of which the best – the most easily digestible – olive. All sorts of margarines are completely excluded for you! And all fats – both animal and vegetable origin – should be added only to ready-made meals, without being subjected to heat treatment, during which they decompose.
The influence of carbohydrates on the development of peptic ulcer is also ambiguous. On the one hand, carbohydrates are the main source of minerals, dietary fiber, and energy. As a rule, they are weak causative agents of gastric secretion and are therefore useful in peptic ulcer disease. Puree, slimy soups from potatoes, carrots, pumpkins, squash, cauliflower, tomatoes; juices from apples (without skin), ripe grapes do not irritate the stomach.
But, on the other hand, carbohydrates are strong irritants of the autonomic nervous system, which governs such unconscious phenomena as redness, sweating, palpitations and … secretion of gastric juice. In addition, carbohydrates often contribute to bloating of the stomach, its bursting with gases (white cabbage is especially “sinful” with this, so it is not recommended for ulcers). Therefore, with all the value of carbohydrates, their number in your diet is reduced.
But let’s not forget about the psychological aspect, which has a huge impact on the work of the entire digestive tract. If stress has a detrimental effect on our digestion, then positive emotions are just a balm for the stomach. Snacking on the run, dry food, discussing problems or reading the newspaper does not “satisfy” him at all. But the beautiful serving, pleasant company, leisurely absorption of food, and even beautiful music – this whole ritual “with feeling, properly, with arrangement” has existed for centuries for a reason, helping our ancestors cope with dozens of changes in the fattest, spicy dishes without damage for good health. Only, for God’s sake, one should not conclude from this that one can indulge in gluttony under Tchaikovsky without consequences. But try to serve the most “lean” dinner with grandmother’s china, crystal and silver, and, believe me, fresh pureed vegetables will acquire an unforgettable taste and aroma.
