Spinach does not have the strong flavor of sorrel or green garlic. But in the fight against the consequences of winter beriberi, he is an indispensable assistant. In its nondescript leaves, one and a half times more protein than in milk, and vitamins and trace elements are not destroyed even after heat treatment.

This product has more nutrients than any other. It is a source of vitamins C, A and K and antioxidants that help protect us from heart attack and stroke. It is rich in iron and folates, which not only save the nervous system, but also lower the level of homocysteines, substances that are dangerous for blood vessels.

Spinach protects against colon cancer, osteoporosis and arthritis.

Spinach is not yet very popular in Russia, although in Western countries it is eaten a lot and willingly. They do it right, because the substances contained in spinach leaves remove toxins from the body, salts of heavy metals, and have a laxative effect.

The French call spinach “the broom of the stomach.” Spinach dishes are a dietary product rich in protein, which includes all the necessary amino acids.

Eating spinach, kale and other leafy vegetables reduces the risk of heart disease by 11%. Due to the content of carotenoids (lutein and zeaxanthin) in these vegetables, the possibility of developing age-related problems of the visual apparatus is reduced. It is recommended to use 350 gr. leafy vegetables per week. Frozen vegetables are just as good as fresh ones.

Llutein, one of the few antioxidants that can accumulate in the tissues of the eye. Lutein increases visual acuity and photosensitivity, reduces stress when working at a computer, reduces the risk of age-related degeneration – in a word, it is simply necessary for the health and beauty of the eyes. The daily requirement of free lutein just to maintain eye health is 5 mg. But to influence the problem, a dose of up to 15 mg per day is needed. This is 250 grams of spinach.

One bowl of spinach contains only 41 calories. and does not contain fat at all, so feel free to include it in your diet for weight loss: it will not harm either the waist, or the hips, or the rest of the body.

Scientists from the Institute of Food Research (England) compared the benefits of some vegetables, among which was spinach, raw and after heat treatment, and came to the conclusion that the carotenoids contained in spinach, as a result of heat treatment, are absorbed by the digestive tract for 10-30 %, in its raw form, the digestibility is only 2-3%.
