Among tea lovers, white varieties are especially respected. These are the most refined and expensive varieties of tea, and for good reason, because white tea is very useful and has truly healing properties. But at the same time, white tea is very capricious in storage, processing and transportation, so in our country it is an infrequent guest and is truly quality tea not so easy.

What is tea like?

The modern rhythm of life rarely gives you the opportunity to slowly pamper yourself with a gourmet drink, we mostly drink coffee or tea on the run. However, if you have enough free time for tea drinking, treat yourself to a tea ceremony.

Today there are many varieties of tea: black – the well-known and most common variety, green tea, red or yellow, and even blue tea, but the difference between different varieties is only in the methods of collection, processing and storage. One of the rarest and most expensive varieties is white tea. The Chinese are very reluctant and in very limited quantities export it.

White tea secret

The taste and color of tea, the amount of nutrients in its composition depend on how the leaves are processed after harvesting and how fermented they are. White tea is minimally processed leaves with virtually no fermentation, the leaves are steamed for no more than a minute and then dried in the sun. Thus, tea practically does not lose its healing properties. White tea varieties are very capricious, so they are usually processed at the place of collection.

The white variety of tea is the most delicate, not yet fully blossomed leaves-buds with a whitish hairy edge along the edge, hence the name of the variety. The Chinese call these tea sprouts white cilia, and to get a kilogram of such tea, more than one hundred thousand of these leaves are needed. They are collected by hand.

A slightly more simplified (and cheaper, but less tasty) version of white tea is the top tips (a couple of leaves from the very top). The villi on tea on the upper leaves appear only in early April, and they collect it in just two days, from five to nine in the morning.

Why white tea is valued

White tea has the most delicate aroma and delicate taste, it can easily be spoiled by foreign odors, as it absorbs them instantly. That is why it is difficult to transport it, and pickers are forbidden to use strongly smelling substances during work – garlic, spices and smoke. All this can negatively affect the specific aroma and taste of tea.

When white tea is harvested, orchards bloom in the Chinese provinces, and they usually coexist with tea plantations. The first fluffy leaves of tea bushes absorb the aromas of flowering trees, and this gives the drink the aroma of spring flowers.

How to distinguish white tea from green

The most stringent requirements are imposed on the storage of white tea: tightly closed tin containers that do not allow light to penetrate, increase humidity and pungent odors. That is why it is expensive – the cost of a kilogram of such tea reaches a thousand dollars or more.

But negligent sellers in tea shops try to pass off ordinary and cheap green tea as white tea, so you need to buy white tea only in certified and specialized tea shops.

The tea leaves must be even, twisting or breaking is not allowed, they have a silvery color with a green tint on top, and a whitish color with fluff on the bottom of the leaf. This tea has a herbaceous or floral scent.

The healing power of white tea

Of course, white tea is appreciated for its taste and aroma, but its exclusive properties are not only in this. White tea is practically a medicine, in ancient China it was served exclusively to the emperor and used only as a healing agent.

Due to the minimal processing of tea with steam, it retains the maximum of its beneficial properties, it contains a large amount of antioxidants, bioflavonoids and polyphenols, and these are powerful agents against the formation of cancer cells. These substances actively strengthen the immune system and fight colds and stress. White tea has been shown to have antimicrobial and antiviral effects, and helps fight free radicals and ageing.

White tea contains a lot of fluorides, which keep teeth intact, fight against the development of caries and tartar. When drinking white tea, blood pressure normalizes and the work of the heart and blood vessels improves, the amount of bad cholesterol decreases. A cup of green tea contains as many vitamins and minerals as one carrot.

How to brew white tea?

This drink requires extremely delicate handling. Simply pouring boiling water over the leaves means spoiling the drink. Required filtered or spring water, brought to a boil, but not boiled. The water is cooled to 70 degrees, poured into a preheated ceramic teapot.

About two spoons of tea are taken for each cup, the drink is brewed for about 5 minutes for the first time, then you can brew it three more times (2-3 minutes for re-brewing).

For medicinal purposes, tea is brewed and infused for about 15 minutes, they drink it three times a day for three weeks. In this case, the infusion acquires a golden-green or yellowish color.

White tea is a drink for the leisurely, they drink it, savoring it, and only in its pure form. They should not drink cakes, chocolates or sweets – it will only spoil the impression of the drink. White tea is low in caffeine and tannins, which means it can be drunk at night.
